                                            Manufacturing of Rasmalai lachha

Rasmalai lachha is one of the most important and delicious sweet items which is use in sweet fancy item and it is made from milk after boiling of cow and buffalo milk mixture.

Ingredients:-Cow milk 4 kg,Buffalo milk 6 kg

Equipment:-Tawi, Patila, Seave,bardana, Bhathi, wooden seak or Flexible wire etc.

Procedure:-
For manufacturing rasmalai lachha we take cow and buffalo milk in tawi and mix properly as per ratio
boil milk
Then put on bhathi and boil in low temperature
Then with the help of seave remove unwanted particle which is include in milk
 
After boiling it have made thin layer(malai) on top surface
Then we remove this layer with the help of wooden seak on the  top corner of tawi
It will repeat regular and continuous process for 1.5 hours
After 1.5 hour remaining rest milk which is not form malai it is removed
Now malai layer kept  some time 20 to 30 minute at room temperature
When it is dry then cut  peaces with the help of knife
Now packing it or use in other rasmalai laccha product. 


Yield:-1.1 kg
Self life:-10 to 15 days at room temperature
