Pista burfi is a one one of highest costly Indian sweets which is made from pista and sugar it is very delicious test and high protein fiber it has generally consumed by upper or middle class family due to high cost . It have lot of benefits for our health its color and appearance are also very attractive .

In this post i will discussed about manufacturing of pista lauj pinda and Pista Burfi.
Ingredients:-Pista
small-3kg,Sugar-1.8kg,Deshi ghee-150gm,Glucose Liquid-50gm,Colour pea
green-1/3gm,Water-700ml
Yield :-4.5 to 4.8

Procedure:-First of all we take
pista and put in marken cloth and drop
in hot water 3 to 4 time(One round 5 second)
Now the
boiled pista put in jut bag and press 5 to 10 minutes with the help of hand

Now remove
upper layer peel off with help of table fan or with picking hand(Approx 100gm
peel remove in 3 kg pista )
Then peeled
pista put on Grinder or pista chopping machine and cut small fine particle

Prepare
sugar syrup with the help of sugar and water boiling time 10 minute 90 to 100°c
Now add
glucose and colour in sugar syrup and mix properly
When syrup
is ready then mix pista pest in syrup and mixing

Now put
ghee in paste and and mix properly
Now the
ready pista lauj pinda put into a tray cool at room temperature 3 to 5 hours.
