Manufacturing of kaju
Gujiya
Gujiya is most popular
sweet dish in India and its shape is very attractive so in this post
I will suggest you how to make gujiya from kaju base which have
inside dry fruits stuffing
Ingredients:- Kaju
pinda( prepared mixture of kaju pest and sugar), Pista,
Almond(Badam),kesar,elaichi powder,misri dana (sugar sandy) silver
lives etc.
Equipment :-Kettle
and musta machine for preparation of kaju pinda(base),bardana etc.
Procedure:- First
of all we prepare stuffing which is fill between kaju gujiya base
So for 1 kg stuffing
preparation we take pista -50g and cut into small pieces then add
badam (Alomond-700g) cut small pieces now add misri dana-250g,elaichi
powder -3g , kesar-1g and mix it properly in a container.
Now we take kaju pinda or
base quantity as per your requirement (we already discussed how to
make kaju pinda in my previous post.
So take kaju pinda and
make a thin sheet with the help of belan
Now cut half circle with
the help of frame
Then make conical shape
with the help of hand
Now make gujiya like shape
with hand and coating silver leaves on upper surface
Now it is ready to
surve or packing
Self life-7 days on
room temperature 15 days at frozen condition
