Manufacturing of kaju
Samosa
Kaju samosa is type of
kaju fancy items it is Indian sweet dish and its shape is very
attractive like samosa made from kaju base which have inside dry
fruits stuffing
Ingredients:- Kaju
pinda( prepared mixture of kaju pest and sugar), Pista,
Almond(Badam),kesar,elaichi powder,misri dana (sugar sandy) silver
lives etc.
Equipment :-Kettle
and musta machine for preparation of kaju pinda(base),bardana etc.
Procedure:- First
of all we prepare stuffing which is fill between kaju samosa base
So for 1 kg stuffing
preparation we take pista -50g and cut into small pieces then add
badam (Alomond-700g) cut small pieces now add misri dana-250g,elaichi
powder -3g , kesar-1g and mix it properly in a container.
Now we take kaju pinda or
base quantity as per your requirement (we already discussed how to
make kaju pinda in my previous post.
So take kaju pinda and
make a thin sheet with the help of belan
Now cut full circle with
the help of frame
Now fill in side prepared
stuffing 5 gm
Now it is ready to
serve or packing
Self life-7 days on
room temperature 15 days at frozen condition
