Patisa is one of famous Indian sweet dessert which is sohan papdi category and manufacturing from maida,besan,ghee,sugar and decoration on top by almond (badam),it is cube like structure,yellowish colour,flaky and crisp texture

Patisa

Ingredients:- for yield 6 kg

                          Maida-1kg

                          Besan-1kg

                          Ghee-2kg

                          Sugar-2 kg

                          Badam fried-300gm

                          Turmeric  powder-1gm

Manufacturing of patisa

Processing:-

Step 1.first of all take ghee in roasting kettle and boil ,after boiling add besan and maida and haldi powder then mix properly for 1 hours at low flame temperature

Step 2.After proper mixing besan pest have to remove from kettle and put on big container 

Sugar syrup

Step 3.Same side we prepare sugar syrup or chasani so take sugar and water in kadahi and boil 10 to 15 minutes 

Step 4.After prepared sugar chasani it have to put on cooling pata and hold for cool 1 minutes

Step 5.After cooling syrup it have to mix in besan pest and make net fiberic structure

Step 6.After proper mixing it have to put on patta and fold and  press with another patta

Step 7.Now uniform sheeting with the help of belan

Step 9. After sheeting cutting squire and cubic shape with the help of knife and scale then decoration with  half badam

Now Patisa is ready to serve or packaging
