Vegetable Biryani is a dish made by cooking basmati rice with mix of veggies, herbs and special species of biryani. Mostly Biryani was made by cooking marinated meat with basmati rice and spices. Now vegetarian version become much easy and simpler. In this no need of marination .It takes only 30 minutes to prepare & makes a perfect meal for your hubby or kids lunch box.

Prep. Time : 5 Minutes
Cook Time : 25 Minutes

Ingredients For cooking Veg Biryani:-

  1. Basmati rice 240 ml (after soaked)
  2. Ginger Garlic Paste 1 Teaspoon
  3. 1 Green chili
  4. 1 medium onion sliced
  5. 2 tbsp mint leaves
  6. ½ to ¾ teaspoon chili powder (according to taste)
  7. 2 tbsp coriander leaves
  8. 1 teaspoon Gram Masala (according to taste)
  9. 1 Small tomato chopped
  10. 1 ¾ cups water or coconut milk
  11. 2 tbsp ghee (or oil)
  12. 2 tablespoon curd
  13. 1/8 teaspoon salt

1 cup mixed vegetables

  1. 1 small potato or beans
  2. 1/3 cup green peas
  3. 1 medium carrot

Spices for vegetable biryani

  2. 1 star anise
  3. 6 green cardamoms (For smell)
  4. 5 cloves
  5. ½ teaspoon jeera

For Garnish And Serving

  1. 12 Cashews for garnish
  2. ½ tbsp lemon juice

Method:-

  1. Soak basmati rice for at least 18 min. Drain the water and take out.
  2. Chop all veggies like coriander and mint.

For making Veg Biryani

  1. Add ghee to a pressure cooker and heat it.
  2. Net bay leaf, jeera, cloves,
  3. Fry it for 1 to 2 min.
  4. Add chopped or sliced onion and green chilies.
  5. Fry it stirring often the onions turn golden.
  6. Next add ginger garlic paste and saute until the raw smell has gone off.
  7. Add off the chopped vegetables & fry for only 2 minutes.
  8. Then add chopped tomatoes,salt,curd,Red chilli powder,mint leaves,coriander and garam masala.
  9. Now mix it all & fry on high flames for 2 to 3 minutes.
  10. The tomatoes should break down completely.
  11. Drain the water from the rice and spread larger even over veggie.
  12. Measure the coconut milk to a separate bowl.
  13. Add salt & lemon juice. Then mix it properly and taste water.
  14. If needed add more.
  15. Pour the small water across the sides or edged of the pot.
  16. Sprinkle 1 tsp ghee, 2tbsps chopped pudina & Few fried onion. (optional)
  17. For pressure Cooking: Cover the pressure cooker & cook for 1 whistle on a medium high flame. Turn off the stove. Then release the pressure after 1 to 2 mins using a wooden spoon . Now fluff up veg biryani with a fork.
  18. Now serve Veg biryani with raita
