5.     Turmeric powder

6.     ½ half tsp baking powder

7.     Water as required

8.     Hot water as per need

9.     8-10 kadi leaves

10.                         ½ tsp sugar

Recipe

1.      mix suji and besan properly in bowl.

2.      Add water little by little and prepare a thick solution.

3.      Add curd to it and beat it well.

4.      Now spread the prepared tadka over the dhokla.

18.  Keep the water on the gas to boil.

19.  When the water starts boiling, take the batter and add baking soda to it.

20.  If baking soda is not available then you can also add Eno powder in it.

21.  Now pour this batter in the plate which was greased with oil and spread it.

22.  Keep in mind that do not fill the batter till the top of the vessel, rather leave some space empty, because after making the Dhokla, it will swell up to the top of the vessel.

23.  Now place the pot of Dhokla over the stand in which water was boiling and the stand was kept.

24.  Then cover it from above and reduce the gas flame to medium.

25.  Let it cook for about half an hour on medium flame.

26.  After half an hour, check how cooked the dhokla is with a clean knife or toothpick.

27.  If the batter does not stick to the knife, it means the dhokla is cooked.

28.  Now keep the dhokla to cool.

29.  Meanwhile, heat oil in a pan for tempering.

30.  When the oil becomes hot, add mustard or mustard seeds, curry leaves, green chillies, sugar, salt, lemon juice and some water.

31.  Tadka is ready, now take out the cooled dhokla in a plate with the help of a knife.

32.  Cut it into small or medium sized pieces.

33.  Now spread the prepared tadka over the dhokla..

 

2.    Theplaa

Thepla is one of the most popular dish in Gujarat. The main ingredients is besan.

 

Ingredients

1.      salt

2.       half teaspoon turmeric powder

3.       Half tsp chilli powder4

4.       half teaspoon celery5

5.       half teaspoon coriander powder6

6.       Half cup oil for kneading the dough

7.      1 cup wheat flour

8.      ½  cup gram flour

9.       cup curd

10.   half cup finely chopped fenugreek

11.   1 teaspoon finely chopped coriander

Recipe

n a vessel, mix gram flour, wheat flour, red chilli powder, turmeric, coriander powder, curd, salt, celery, chopped fenugreek, 2 teaspoons oil and knead into a soft dough by adding water as required.

 

1.       Now keep the dough covered.

2.       After 20 minutes, knead the dough well again and make it soft.

3.       Make balls of dough.  Roll it like roti using dry flour.

4.       During this time, keep the pan on the gas to heat on medium flame.

5.      When the pan becomes hot, apply oil on the pan and cook thepla on low flame.

6.      When the thepla is cooked from one side, cook it from the other side.

7.      Delicious theplas are ready.  Serve it with pickle, curd or chutney
